Shine On Lemon Cheesecake

Or worse, feel like you have failed and let yourself down when you caved in for a craving of something sweet. Now you can! The dessert in this ebook contains intact and potent nutrients. No empty calories as far as eyes can see, no added sugar, white flour, mucus forming dairy products, additives or trans fats. So enough of the guilt feelings. Say Yes and fully embrace your love for sweets!
I’ve always had a sweet tooth and have loved all things sweet from creamy birthday cakes, to cookies, ice cream, chocolate, candy, pastry, buns, you name it. When I did my first own raw cake, I felt like a revolution. Both because it was so simple, and how fresh and tasty it was! But the best of all: it didn’t make me feel bloated and yucky afterwards, quite the opposite actually. I felt more alive and sparkling than ever! Now I want to teach You how to do the same through this ebook, and I want You to enjoy raw desserts as much as I have and do.
I created this ebook so that even if you are a beginner you can feel confident enough to make these raw cakes, pies, tortes, puddings and cheesecakes. I’m taking you through the basics by showing you a few key techneques that enable you to start experimenting with your own raw desserts. Suddenly, you have ground a nut flour, made a date-paste and formed your first raw pie crust. When you pour the filling over the crust, you realize that this is a brilliant idea - why didn’t you think of doing this before?! By the time the pie is ready to be eaten after a couple of hours in the fridge, you are already way into your healthy raw dessert addiction. Welcome to the raw dessert world my Friend! The neat thing with this is that you don’t need a lot of kitchen tools you don’t even know the name of to do this. I myself use a close to antique food processor plus my refrigerator to create these desserts. But there’s more..
...how you can quickly whip up delicious cheesecakes that melt in your mouth,

The five most common ingredients used in my raw sweets and cakes, have properties in your body that are truly beneficial! These are ingredients that everybody should have in their kitchen. Throw out your white flour and sugar and fill your kitchen cabinet with super foods instead!
1# Raw Cacao (completely different from roasted cacao): Raw cacao is one of the planet's most nutrient dense foods. The cacao bean contains over 300 different plant chemicals. One of them being anandamide naturally found in the human brain that releases happy feelings. Another chemical (an amino acid) releases serotonin that makes you euphoric. “PEA”, known as the ‘molecule of joy’, makes you happy and present, focused and helps you to stay in a positive state of mind. Another amino acid in raw cacao works as a natural form of Viagra. And the “MAOs” (monamine oxidase inhibitors) that has an anti-aging effect plus is an antidepressant. It also helps us to regulate our hunger so that we eat when we are hungry instead for emotional reasons. Raw cacao can therefore assist you in losing weight. This is also a great anti-cancer food: one tablespoon contains over 25.000 antioxidants! (955 ORAC units). Antioxidants are important as they fight free radicals that cause cancer. It is also a great heart-food: clinical studies show that cacao can seriously decrease the risk of cardiovascular related diseases.
2# Virgin Coconut oil: smells and tastes like divine, smooth coconut. It’s wonderful for any Fudge or caramel tasting dessert. Coconut oil is another extremely nutritious food. It contains lauric acid, that can be found in breast milk and is the component that makes the baby healthy and strong. Coconut oil also contains carprylic acid that is anti-fungal, anti-septic and anti-viral. Monolauric acid is yet another great component in coconut oil. It fights candida, intestinal worms, bacterial infections and viruses like herpes, flu, hepatitis C and HIV. Scientists in the Philippines are now working on finding evidence that coconut oil kills HIV-virus. Coconut oil is free from cholesterol and trans fats. It melts in your hand; an indicator how quickly it goes out into your blood stream. It doesn’t store as body fat, but is being used directly by muscles and organs and turns into energy. Coconut oil also stimulates the thyroid gland which helps weight loss.

3# Hemp, hulled seeds: The hemp is another great food with an incredible nutritional value. The seeds have a perfect balance between the Omega 3, 6 and 9 fatty acids, and GLA fatty acids and proteins (35%). The proteins in hemp seeds are easily absorbed by the body, compared to soy protein. Besides the protein, hemp contains different minerals like iron and vitamin E (three times more than flax seeds).
4# Agave nectar: forget about sugar. This is a natural sweetener, that comes from the Agave cactus. Cold pressed, raw agave is 25% sweeter than sugar, and has a lower GI (glycemic index). It contains vitamins, enzymes and minerals like iron and potassium, (potassium is needed for a healthy nervous system, and is an antidepressant mineral, and great against anxiety and sensitivity to stress).
5# Mesquite flour: (is pronounced mes-keet) comes from the Mesquite tree that grows in the dessert. It’s a legume and you grind the pods into this cinnamon smelling and fudge tasting flour that is so wonderful to use in raw desserts and smoothies. Mesquite contains 15% protein, a wide array of minerals such as iron, magnesium, zinc, calcium, potassium, boron, chromium, sodium, phosphorous and manganese to name a few. It is anti-septic, anti-bacterial, anti-viral, anti-allergenic, and anti-inflammatory. It is also full of fibre (25%). It is naturally free from gluten and prolongs the feeling of satiety: it takes 4-6 hours for the body to digest mesquite, whereas it takes 1 hour for the body to digest wheat. Mesquite raises the levels of serotonin - the happy hormone!
